SHINOBI-CHA, the Japanese method to prepare tea with ice

Shinobi-Cha is a rather unusual method of preparing high-grade Japanese green teas. Instead of using hot water, ice is used, which has a profound effect on the character extracted from the tea leaves. Technically, the method is quite simple:

Place the dried tea leaves in a pot.
Cover the tea with ice cubes.
Wait about 45 minutes.

The resulting Shinobi-Cha is a very pleasant liquor, although I don’t think it is a tea to drink in large quantities because the iced liquor has a very strong flavor. ⠀

For this method, they most often use Gyokuro, but other high-quality Japanese green teas also work very well.

I think it’s a good idea to experiment at home, what’s the worst that can happen?

Although it is true that the method is simple, you have to take care of the details. First of all, you need to use ice cubes made from good-quality water. I recommend filtered water or, better yet, pure spring water.⠀

The other important element is a proper brewing vessel. Teapots such as the tokoname kyusu or the banko-yaki houhin would be the best option for brewing because they have a high iron content that softens the tea nicely. However, a cast iron pot will also work. Brewing in a glass teapot is likely to produce an unpleasant drink, and perhaps using porcelain would be just a little better. I have a Teavana perfect tea maker and that is the one I plan to use, will it work?

The way it is prepared is 6 or 7 grams of Gyokuro (about 1.5 tablespoons) and the teapot filled with ice cubes. I am going to use the conventional measure to make a cup of tea, which is one gram for every 100 ml of water. Measure the water before taking it to the fridge to form cubes and then I’m going to weigh it. Let’s say that to apply the scientific method you have to measure everything, haha, and if it doesn’t turn out very well, what you would have to do is adjust the variables until you have a perfect cup of tea, rather, cold brew.

Go ahead and try this method! Use the tea you have at home and tell us how it went. At the moment, I have a Japanese Sencha green tea and it is the one I plan to use.

In the teapot that you selected (clean), cover the tea leaves with the ice cubes, and let it steep for about 45 minutes. Strain and try to see what you think.
